Lazy Apple Pie


To be honest, apple pie is one of my favorite desserts. Especially if is hot and served with vanilla ice cream. I made my own version of apple pie and this is the combination of Serbian and American way of making. In Serbia, name for this pie is "Lazy Apple Pie" and it's old traditional way of preparation. It's very easy for making, with ingredients which are not expensive and usually we are all having in our home.

Ingredients (double-crust pastry):

2 Eggs

4 tsp Baking powder

2/3 cup Greek yogurt

2 sticks of butter or margarine (room temperature)

1 1/2 Crystal sugar

5 1/4 cups all-purpose flour

1 tsp vanilla extract

Ingredients (filling) :

1 cup 1/2 Crystal sugar

1 tsp cinnamon

14 cups apple slice (1.5 kg/3.30 lb)

Preparation:

Heath oven to 350ºF

In one bowl mix together flour and butter, add eggs, yogurt, sugar and baking powder. Make pastry and put in the fridge for 15-20 minutes. Cut in to two pieces.

For filling cook together finely chopped apples, cinnamon and sugar for a few minutes.

In prepared baking pan put baking paper and line first part of pastry, add apples and cover with second line of pastry.

Bake until pastry is golden and crusty.

Serve hot with vanilla ice cream or cold.
